Week One - Day One - Breakfast

 

Hi everyone :)

Welcome to my first blog, and thank you for being here.

My name is Amelia Robinson and I have been a diabetic for a few years now.  I started these blogs as a means of jotting down my experiences in an effort to defeat this dreaded disease, and now my sisters and daughter have jumped on board as well.  You never know, maybe you might like to join us too 😊

The first thing I did, was try to put some order into my day.  I'm not your energetic type, and I tend to sit in front of my computer screen far more than I should without taking a break, so I needed some type of structure.  To that end, I created a daily plan that included a sensible diet for diabetics, and an easy cardio exercise regime for me to follow. 

 

That was the easy part!

The hardest part, was following it.  Where does the willpower come from to actually make these drastic changes?  How do you even make yourself exercise when you've spent half your life sitting on your bottie or eating all the wrong food like there's no tomorrow?

I don't know about you, but for me, my family had a whole lot to do with me getting off my bottie and changing my life.  As I watched my children and grandchildren grow, I felt a profound duty to try my hardest to be around for them for as long as I could.  And so 'bring on the changes' was what I kept thinking to myself.

One of the first recipes I made from my eBook 'Stamp Out Diabetes in your Life - 30-day Menu', was with my sister, who was the camera person. 

 

 

 

 

 

 

 

 

 

 

 

 

 

I thought the taste was delicious and the ingredients blended together easily.  The longest part was in preparation, about 10 minutes, but within 15 minutes, I was enjoying this healthy, filling brekkie smoothie.  My sister prepares a green smoothie for her partner each morning, which she drinks on her way to work.  She says they're ideal because they don't take long to make and they're packed with all sorts of vitamins, minerals and nutrients, but best of all, they keep her satisfied until lunch.

 

 

 

 

 

 

 

 

 

 

 

So let's have a closer look at each of these ingredients, to see why they're so good for us diabetics -

  • Pineapple has a GI of 66 which puts it in the medium range.  This means that the carbohydrates in this fruit are released faster into the blood stream, therefore spiking blood sugar levels a lot quicker.  However, if pineapple is paired with any of the other ingredients in this recipe (because their GI levels are in the lower bracket), then it will be released into the blood stream at a much slower rate, making it safe for us diabetics.

  • Spinach is an excellent source of fibre, and this helps us diabetics because it is slow to digest, therefore our blood sugar levels do not spike as fast.

 

  • Celery functions as an antioxidant and flavonoids are one such antioxidant found in this very beneficial vegetable.  These flavonoids help to combat diabetes by regulating glucose absorption in the intestine, and with carbohydrate digestion.

 

  • Like spinach, both cucumber and lemon are vegetables high in fibre, making it slower to digest.  This is good news for us diabetics because our blood sugar levels do not spike.  That means we can eat as much as we like.

 

  • Researchers from the University of  Sydney, Australia, found that the active ingredient in ginger (gingerol), can help the muscle cells absorb glucose without the use of insulin and they are now looking at ways where this herb can assist to lower high blood sugar levels. 

Straight away I could see what a win/win brekkie meal this was - quick to prepare, cost-effective and, most importantly, healthy and anti-diabetic.

We made a Pineapple and Spinach Smoothie, which is featured in the video below.

This green smoothie is breakfast for week one, day one and the ingredients are pineapple, spinach, celery, cucumber, lemon and ginger - all of which are very good for us diabetics.
